At the more contemporary William Restaurant, with its wrap-around windows and panoramic views of the sea and Funchal Bay, gourmet favourites have a new twist: we were served lobster and duck amuse bouche, followed by roast suckling pig, and a trio of deserts. The passion fruit brûlée was especially intense in its flavour, and the sommelier sensitively matched each dish with local Madeiran wines.

Take the lift or the stairs down to the foot of the cliff and secluded bathing terraces on the edge of the Atlantic Ocean or join a guided tour of the gardens. All the attractions of Funchal lie a 30 minute walk from the hotel, or you can take the hotel’s own bus.
